For the mouse ball, it rotates 2 shafts in the X and Y axis as the mouse moves around. Shaft encoders are attached to these shafts to translate the movements into electrical signals, which are then sent to the computer 😀
I'm not too sure about optical mice since I havent taken one apart, but I'm guessing the laser light reflects of surfaces, with the gradient pattern playing an influence on whether it is moving in a particular direction.
