Controlling the PIC clock speed

Hi there

I have a PIC18f4431 and I have attached a 40MHz crystal to the PIC. How can I check to see what my actual PIC clock speed is (Fosc) and how can I control my PIC clock speed, ie. make it Fosc/4 etc.

Many Thanks
