The number refers to the mesh size of the abrasive.
80 grade will have the abrasive powders of size 80 mesh. This table gives equivalents.

The number refers to the number of holes per linear inch of the mesh. You also have to account for the size of the wires forming the mesh, all of which means that the size is related to (actually less than) 25.4/(grit size) mm.
