  I'd say go with automatic plant watering system based on IoT. The idea is to automatically water the plant when the moisture level in the soil drops to a certain level. Sensors would sense the moisture content and trigger a signal to a pump that'd then send only required amount of water to the plant.

  I hope this would be pretty interesting to work on.
