writing data onto RFID tags

i had this doubt of how data could be written onto RFID tags and also is it possible to overwrite this data easily?
because most of the sites give info on how data is stored and how the tags are identified. if someone could direct me to a website where such detailed info abt the RFIDs are given i would be grateful.
