You will have a hydraulic cylinder, the piston of which will be connected to hand-lever. The other side of piston will be connected to plate which will bend the sheet against fixed platform. Get to know the power, force required. Have a basic diagram prepared and then design the parameters of cylider and hand-lever. You need not fabricate hydraulic cylinder. You may get that ready-made from market.
