how to extract data/information from a image?

hi, i am doing my final year project(signature recognition),i planted to use image acquisition to capture the signature, and i am new to matlab,after i capture an image from image acquisition tool in matlab, how should i examine the image?i am taking the image in grays colour then i dont know what should i do next....

anyone can help me with some useful info please..

If you are working on PHP, you can use the exif_read_data function. It reads the EXIF headers from JPEG or TIFF. For eg:

Have you thought of using OCR to extract text from image? It works great.
