how can data be written onto RFID

i have this doubt of how data can be written onto the RFID tags, also how easy is it to overwrite this data.
because most of the sites offer info on how data is stored and how it is identified using radio freq. if someone could direct me to a site where such detailed info is given i would be grateful.
