Mail: Airmail app : $0.99 ; but it's worth $100
IM: Adium
Image Editing: Pixelmator - a total photoshop alternative
Document Editing: Word for Mac (OSX). There's no worthy alternative to MS Office.
Presentations : Keynote rocks, but PPT is what the world prefers.
Media Player: VLC for OSX and iTunes is awesome too.
Text Editor: Textmate free edition
Coding: Eclipse open source editor
Browser: Safari; because it eats lesser battery and is just as good as Chrome
